Tuscany Bread! A Quick and Easy Post Run Meal


I was given this recipe years ago.  It's pretty much a staple in our diet because it's so quick and easy to put together.  It's our go to recipe for after a long run when we want something substantial in our bellies and really need something in a hurry!  Hope you enjoy it also!













Keep in mind, you can use any type of bread.  We have used sourdough, flat bread and  pizza crust.  If you use  a smaller loaf of bread, just adjust the amount of ingredients to be added based on the size of the bread.

This is what we used today...

1 loaf of french bread

10 oz bag fresh spinach, chopped
12 oz can diced tomatoes, drained
8 oz muenster cheese slices (10-11 slices)


Slice french bread and add the ingredients in the following order
spread on basil pesto
add chopped spinach
add tomatoes
add cheese slices


Bake at 350 degrees until cheese is melted and brown (about 10-15 minutes)

Ready to eat!

Here's your slice!


This keeps well for leftovers wrapped in foil in the fridge. We reheat it in the microwave!

  1. I want it!! I wish I could reach in the screen and pluck it out! It is a family favorite, we (especially me) ask Eve and Bart to make it all the time. You gotta try it.

  3. Thanks Kathy! Have you tried making the Tuscany bread yet? The chicken server's name is "Rooster Cogburn". We named him that after a John Wayne movie character :-)
