Basil pesto is a staple in our diet. We prefer the flavor of fresh home grown basil, so since we are still urban farmers, we grow our basil in our AeroGarden. That way we can have fresh basil any time of year!

OK, so here's what you'll need...
special equipment needed: A food processor
In a food processor (You don't need a large fancy food processor. We just use this Cuisinart mini-prep processor)!
1. Combine the basil in with the pine nuts, pulse a few times. Add the garlic, pulse a few times more.
2. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup
